Ingredients

  • 1 pound sirloin steak cut into cubes
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 red onion cut into chunks
  • 1 zucchini sliced thick
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh parsley chopped

Optional ingredients:

  • Cherry tomatoes
  • Mushrooms
  • Yellow squash

Instructions

Prepare the Steak

  • Choose a tender cut like sirloin and cut it into even one-inch cubes. Equal size ensures the steak cooks evenly and stays juicy.

Make the Marinade

  • In a small bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt and black pepper. Stir until everything is combined. This marinade flavors and tenderizes the steak.

Marinate the Steak

  • Place steak cubes in a large bowl and pour the marinade over them. Mix gently to coat each piece. Cover and refrigerate for at least 15 minutes or longer for deeper flavor.

Prepare the Vegetables

  • Wash and chop vegetables into large chunks. Keep them similar in size so they cook evenly. Bell peppers, onion and zucchini are perfect for kabobs.

Assemble the Kabobs

  • Thread steak and vegetables onto skewers. Alternate steak with vegetables to make colorful patterns. Leave small spaces between pieces to allow heat to circulate while grilling.

Preheat the Grill

  • Heat the grill to medium-high. Lightly oil the grill grates to prevent sticking. A hot grill sears the steak and vegetables perfectly.

Grill the Kabobs

  • Place skewers on the grill and cook 10–12 minutes. Turn occasionally for even browning. Steak should be browned outside but tender inside. Vegetables should be slightly charred and soft.

Rest and Serve

  • Remove kabobs from the grill and let rest for 2 minutes. Sprinkle fresh parsley on top for color and freshness. Serve warm. These Zoe’s Kitchen Steak Kabobs are ready to enjoy.

Notes

  • Use sirloin or ribeye for best flavor.
  • Do not overcrowd skewers; air circulation helps even cooking.
  • Marinate steak 1–2 hours for more flavor.
  • Add cherry tomatoes or mushrooms for variety.
  • Brush kabobs with olive oil while grilling to keep them moist.
  • Try chicken or shrimp instead of steak for variation.
  • Serve with lemon wedges for fresh brightness.
