Yard House Tomato Bisque Recipe

This Yard House Tomato Bisque Recipe is one of my favorite comfort soups. I make it when I want something warm and calming.

Ingredients
  

  • Butter 2 tablespoons
  • Olive oil 1 tablespoon
  • Onion 1 medium, chopped
  • Garlic cloves 3, minced
  • Tomato paste 2 tablespoons
  • Crushed tomatoes 800 g canned
  • Vegetable broth 2 cups
  • Heavy cream 1 cup
  • Sugar 1 teaspoon
  • Salt 1 teaspoon
  • Black pepper ½ teaspoon
  • Dried basil 1 teaspoon
  • Dried oregano ½ teaspoon
  • Bay leaf 1
  • Parmesan cheese for garnish
  • Fresh basil optional garnish

Instructions
  

Melt the Butter

  • Place a large pot on medium heat. Add butter and olive oil. Let them melt gently together.

Cook the Onion

  • Add chopped onion to the pot. Stir often. Cook until soft and lightly golden.

Add the Garlic

  • Add minced garlic. Stir for one minute. Do not let it burn.

Stir in Tomato Paste

  • Add tomato paste to the pot. Cook for two minutes. This deepens the flavor.

Add Tomatoes and Broth

  • Pour in crushed tomatoes and vegetable broth. Stir well to combine everything.

Season the Soup

  • Add salt, pepper, sugar, basil, oregano and bay leaf. Stir gently.

Simmer Slowly

  • Lower the heat. Let the soup simmer for twenty minutes. Stir occasionally.

Remove the Bay Leaf

  • Find and remove the bay leaf. Discard it before blending.

Blend Until Smooth

  • Use a blender or immersion blender. Blend until the soup is very smooth.

Return to the Pot

  • Pour blended soup back into the pot. Keep heat on low.

Add the Cream

  • Slowly pour in heavy cream. Stir gently until fully mixed.

Warm the Soup

  • Heat the soup for five minutes. Do not let it boil.

Taste and Adjust

  • Taste the soup. Add more salt or pepper if needed.

Rest Before Serving

  • Turn off heat. Let the soup rest for five minutes.

Serve Warm

  • Ladle into bowls. Garnish with parmesan and fresh basil if desired.

Notes

  • Use fire-roasted tomatoes for deeper flavor.
  • Add roasted red peppers for sweetness.
  • Replace cream with coconut milk for dairy-free option.
  • Use fresh tomatoes when in season.
  • Blend longer for extra smooth texture.
  • Add chili flakes for gentle heat.
  • Serve with grilled cheese for comfort.
