Ingredients

  • 2 large chicken breasts cut into pieces
  • 1 cup fresh pineapple chunks
  • 2 tablespoons olive oil
  • 1 bell pepper sliced
  • 1 small onion sliced
  • 2 cloves garlic minced
  • ½ cup pineapple juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt to taste
  • Black pepper to taste
  • Green onions for garnish

Instructions

Prepare the Chicken

  • Season the chicken pieces with salt and black pepper. Heat oil in a skillet over medium heat. Add chicken and cook until golden brown. Turn pieces gently so they cook evenly. Remove and set aside.

Cook the Vegetables

  • In the same pan, add sliced onion and bell pepper. Cook until soft and slightly caramelized. Add garlic and stir for one minute. The smell should become sweet and rich.

Make the Pineapple Sauce

  • In a bowl, mix pineapple juice, soy sauce, honey and brown sugar. Stir until smooth. This sauce gives the dish its sweet and tangy flavor. Set it aside for later.

Combine Chicken and Sauce

  • Return the cooked chicken to the pan. Pour the prepared sauce over it. Stir gently so every piece is coated. Let it simmer for a few minutes to absorb flavor.

Add Pineapple Chunks

  • Add fresh pineapple chunks to the pan. Stir carefully so they stay whole. Cook for about five minutes. The pineapple will soften and release its juice.

Thicken the Sauce

  • Mix cornstarch with water to make a slurry. Pour it into the pan while stirring. The sauce will thicken quickly. Cook for two to three minutes until glossy.

Garnish and Serve

  • Turn off the heat and sprinkle green onions on top. Serve hot with rice or noodles. The dish looks bright and smells amazing.

Notes

  • Use fresh pineapple for best flavor
  • Add chili flakes for a spicy kick
  • Grill the chicken for a smoky taste
  • Use chicken thighs for more juiciness
  • Add cashews for crunch
  • Replace honey with maple syrup if needed
  • Serve with coconut rice for extra flavor
