  • Paprika – 1 teaspoon
  • Oregano – 1 teaspoon
  • Salt – 1½ teaspoons
  • Black pepper – 1 teaspoon
  • Brown sugar – 1 teaspoon

Instructions

Heat the Pot

  • Place large pot on medium heat. Add olive oil and let it warm gently.

Cook the Onion

  • Add chopped onion. Cook until soft and lightly golden, stirring often.

Add Bell Pepper

  • Add green pepper. Cook until tender and fragrant, about five minutes.

Add Garlic

  • Add minced garlic. Stir for thirty seconds until fragrant, not browned.

Brown the Beef

  • Add ground beef. Break it apart. Cook until fully browned with no pink left.

Drain Excess Fat

  • Drain extra grease carefully. Leave a little for flavor.

Add Tomato Paste

  • Stir tomato paste into beef. Cook two minutes to deepen flavor.

Add Spices

  • Add chili powder, cumin, paprika, oregano, salt and pepper. Stir well.

Add Tomatoes

  • Pour in diced tomatoes with juices. Stir to combine evenly.

Add Beans

  • Add kidney beans and black beans. Stir gently to avoid breaking them.

Add Broth

  • Pour in beef broth. Stir until chili looks rich and balanced.

Add Brown Sugar

  • Add brown sugar. This balances acidity and heat beautifully.

Bring to Simmer

  • Bring chili to light boil. Reduce heat to low.

Simmer Slowly

  • Simmer uncovered for one hour. Stir occasionally to prevent sticking.

Taste and Adjust

  • Taste chili. Adjust salt or spice as needed.

Rest Before Serving

  • Let chili rest ten minutes. This helps flavors settle nicely.

Notes

  • Use ground turkey for lighter chili.
  • Add corn for sweetness and texture.
  • Use fire-roasted tomatoes for smoky flavor.
  • Add jalapeño for extra heat.
  • Simmer longer for deeper flavor.
  • Use slow cooker for easy prep.
  • Top with cheese or sour cream.
