Ingredients
  

  • 1 cup fresh basil leaves
  • 1/2 cup fresh parsley
  • 2 cloves garlic
  • 1/4 cup pine nuts or walnuts
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Truff oil or truffle oil
  • 1 teaspoon lemon juice
  • Salt to taste
  • Black pepper to taste
  • Optional: red chili flakes for a spicy kick

Instructions
  

Wash the Herbs

  • Rinse the basil and parsley under cold water. Pat dry with a towel. Removing excess water helps the sauce stay smooth.

Prep the Garlic

  • Peel the garlic cloves. Chop roughly so it blends easily. Garlic gives the sauce a rich, earthy flavor.

Toast the Nuts

  • In a small pan, lightly toast the pine nuts or walnuts. This brings out their natural flavor. Be careful not to burn them.

Blend the Ingredients

  • Add basil, parsley, garlic and toasted nuts into a blender or food processor. Pulse until finely chopped.

Add Cheese and Oil

  • Add Parmesan cheese and olive oil. Blend again until smooth and creamy. Scrape the sides as needed.

Add Truff Oil and Lemon

  • Pour in Truff oil and lemon juice. Blend briefly. Taste and adjust salt, pepper, or lemon as needed.

Adjust Consistency

  • If the sauce is too thick, add a teaspoon of water or olive oil. Blend again until perfect.

Serve or Store

  • Use immediately over pasta, chicken or veggies. Or store in an airtight container in the fridge for up to 5 days.

Notes

  • Swap pine nuts with walnuts for a more earthy flavor.
  • Add a small handful of spinach for a milder green color.
  • Use nutritional yeast instead of Parmesan for a vegan version.
  • Mix in a teaspoon of red chili flakes for a spicy version.
  • Warm the sauce slightly before serving to enhance aroma.
