Ingredients
  

For the Filling:

  • Ground beef – 1 pound
  • Onion – 1 medium finely chopped
  • Garlic – 2 cloves minced
  • Bell pepper – 1 chopped
  • Tomato paste – 2 tablespoons
  • Green olives – ¼ cup sliced
  • Raisins – 2 tablespoons
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Paprika – 1 teaspoon
  • Fresh thyme – 1 teaspoon chopped

For the Pie Crust:

  • All-purpose flour – 2 cups
  • Butter – ½ cup cold and cubed
  • Salt – ½ teaspoon
  • Cold water – 6–8 tablespoons

For Topping:

  • Egg – 1 beaten for glaze

Instructions
  

Prepare the Pie Crust

  • In a bowl, mix flour and salt. Cut in butter until crumbly. Add cold water gradually. Form dough. Chill 15 minutes.

Cook the Meat Filling

  • Heat skillet over medium heat. Add ground beef, onion, garlic and bell pepper. Cook until beef is browned.

Add Spices and Flavorings

  • Stir in tomato paste, olives, raisins, paprika, thyme, salt and pepper. Cook 5 minutes until flavors combine. Remove from heat.

Preheat Oven

  • Preheat oven to 375°F (190°C). Prepare a pie dish by lightly greasing with butter.

Roll Out Dough

  • Divide dough in half. Roll one half into a circle to fit pie dish bottom. Press gently into dish.

Add Filling

  • Spread cooked meat mixture evenly over crust. Make sure filling reaches edges but not overflowing.

Top With Second Crust

  • Roll remaining dough half. Cover the pie. Pinch edges to seal tightly. Trim extra dough if needed.

Glaze Pie

  • Brush beaten egg over top crust for a golden finish. Make small slits in the top for steam to escape.

Bake the Pie

  • Place pie in preheated oven. Bake 35–40 minutes until crust is golden brown. Remove from oven.

Cool and Serve

  • Allow pie to cool 5–10 minutes. Slice and serve warm. Enjoy the flavors of Trinidad in every bite.
