Ingredients
  

  • 1 pound flank steak or skirt steak
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cooked rice
  • 1 cup black or pinto beans cooked
  • ½ cup chopped fresh cilantro
  • ½ cup diced onion
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • ½ cup salsa or pico de gallo
  • 1 lime cut into wedges

Instructions
  

Prepare the Steak

  • Trim excess fat from the steak. In a large bowl, mix olive oil, garlic, chili powder, cumin, paprika, salt and pepper. Add steak and coat evenly. Marinate for at least 10 minutes.

Cook the Rice and Beans

  • Cook rice according to package instructions. Heat beans in a skillet with a pinch of salt and pepper. Keep warm while grilling steak.

Grill the Steak

  • Preheat a grill or grill pan to medium-high heat. Grill steak 3–5 minutes per side until it reaches desired doneness. Let rest 5 minutes before slicing thinly against the grain.

Prepare Vegetables and Toppings

  • Chop fresh cilantro and onion. Slice lime into wedges. Shred cheese and prepare salsa or pico de gallo. This adds freshness and flavor to the burrito.

Warm the Tortillas

  • Heat tortillas in a dry skillet or microwave until soft and pliable. Warm tortillas help prevent tearing while rolling burritos.

Assemble the Burritos

  • Lay a tortilla flat. Add a scoop of rice, beans, sliced steak, onion, cilantro, shredded cheese and salsa. Add guacamole or sour cream if desired.

Roll the Burrito
