Subgum fried rice is a colorful and tasty dish. It is full of veggies, meat and rice. I love it because it feels like a meal in one bowl.

Ingredients
  

  • 3 cups cooked rice chilled
  • 2 tbsp vegetable oil
  • 2 eggs beaten
  • 1 cup cooked chicken diced
  • 1/2 cup cooked shrimp optional
  • 1/2 cup ham diced
  • 1 cup carrots diced
  • 1 cup peas
  • 1 cup corn
  • 1/2 cup bamboo shoots sliced
  • 1/2 cup water chestnuts sliced
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions
  

Prepare the rice

  • Use cold cooked rice. This keeps the grains separate and fluffy.

Heat the wok

  • Add oil and heat until it shimmers. A hot wok makes better fried rice.

Cook the eggs

  • Pour beaten eggs in the wok. Scramble and set aside.

Sauté onion and garlic

  • Add onion and garlic. Cook until fragrant and soft.

Add veggies

  • Add carrots, peas, corn, bamboo shoots and water chestnuts.

Add meats

  • Add chicken, ham, and shrimp. Stir well with the veggies.

Add rice

  • Add cold rice to the wok. Break up any clumps with the spatula.

Season with sauces

  • Pour soy sauce, oyster sauce and sesame oil. Mix evenly.

Add eggs back

  • Add scrambled eggs back to the wok. Stir until mixed.

Garnish and serve

  • Top with green onions. Serve hot and enjoy.

Notes

  • Use day-old rice for best texture.
  • Cook on high heat for a smoky flavor.
  • Add more soy sauce for deeper taste.
  • Try adding pineapple for a sweet twist.
  • Use tofu for a vegetarian version.
  • Add chili sauce if you like heat.
