Ingredients
  

  • 2 cups cooked white rice
  • 2 chicken breasts
  • 2 cups corn kernels fresh or frozen
  • 1/3 cup mayonnaise

  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika

Cook the Rice

  • Start by cooking your rice according to package instructions. Use a medium pot and add a pinch of salt. Once done, fluff it gently with a fork and keep it warm.

Season the Chicken

  • Take chicken breasts and season them with salt, pepper, chili powder and paprika. Rub the spices well so the flavor goes deep into the meat.

Cook the Chicken

  • Heat olive oil in a pan over medium heat. Add chicken and cook for about 6–7 minutes each side. Cook until golden and fully done inside. Let it rest before slicing.

  • In the same pan, add corn kernels. Cook them for a few minutes until slightly charred. This gives a smoky street-style flavor.
