Ingredients
  

  • 12 fresh jalapeño peppers

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs or panko
  • Oil for frying or baking spray

Instructions
  

Prepare the Jalapeños

  • Wash the jalapeños well. Slice them in half lengthwise. Remove seeds and membranes carefully.

Soften the Cheese

  • Place cream cheese in a bowl. Let it sit until soft and easy to mix.

Mix the Filling

  • Add cheddar, Monterey Jack, garlic powder, onion powder, salt and pepper. Mix until smooth and creamy.

Fill the Peppers

  • Spoon the cheese mixture into each jalapeño half. Fill generously but do not overflow.

Prepare Breading Stations

  • Set three bowls. One with flour. One with beaten eggs. One with breadcrumbs.

Coat the Rattlers

  • Dip each stuffed jalapeño into flour. Then egg. Then breadcrumbs. Press gently to coat.

Chill for Better Texture

  • Place coated peppers on a tray. Chill for ten minutes to help breading stick.

Choose Cooking Method

  • Preheat oven to 400°F or heat oil in a pan. Both methods work well.

Bake or Fry

  • Bake for 18 to 20 minutes or fry until golden. Turn halfway if baking.
