Ingredients
  

  • 2 pounds pork belly skin on
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp white pepper
  • 1 tbsp garlic powder
  • 1 tsp five-spice powder optional
  • 1 tbsp oil
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 green onions chopped
  • 1 red chili sliced (optional)

Instructions
  

Score the pork skin

  • Use a sharp knife to make shallow lines on the skin.

Pat dry the pork

  • Dry the pork belly with paper towels. Dry skin makes it crisp.

Mix the seasoning

  • Combine salt, black pepper, white pepper, garlic powder and sugar.

Rub seasoning on the meat

  • Rub seasoning on the meat side only. Keep skin clean.

Add oil and soy sauce

  • Brush oil and soy sauce on the meat. This adds flavor.

Place pork on wire rack

  • Put pork belly on a wire rack over a tray. This helps crisp the skin.

Roast in the oven

  • Cook at 375°F (190°C) for 1 hour. Then increase to 425°F for 15 minutes.

Let it rest

  • Remove from oven and rest for 10 minutes. This keeps the meat juicy.

Cut into pieces

  • Slice pork into bite-sized pieces. Serve with green onions.

Sprinkle extra pepper

  • Add more pepper and chili. Enjoy the crispy texture.
