Instructions
  

Prepare the Garlic

  • Peel and finely mince the garlic cloves. If you want a smoother sauce, use a garlic press. Fresh garlic gives the sauce its bold flavor.

Mix Mayonnaise and Oil

  • In a mixing bowl, combine mayonnaise and olive oil. Whisk together until smooth. This forms the creamy base for your sauce.

Add Garlic

  • Stir the minced garlic into the mayonnaise mixture. Mix thoroughly. This ensures the garlic flavor is evenly distributed in the sauce.

Season the Sauce

  • Add salt, black pepper and smoked paprika if using. Stir well to combine. Taste and adjust seasoning as needed.

Add Lemon Juice

  • Pour fresh lemon juice into the sauce. Mix again. The lemon adds brightness and balances the richness of the mayonnaise.

Adjust Consistency

  • If the sauce is too thick, add 1-2 tablespoons of water. Stir until smooth. The sauce should be pourable but creamy.

Serve or Store

  • Transfer the Salsa de Ajo to a serving bowl. Use immediately or cover and refrigerate. It keeps well for up to 3 days.
