  • 1 can 400g diced tomatoes
  • 4 cups chicken broth
  • 1 cup cooked white beans
  • 1 cup small pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish
  • ½ cup grated Parmesan cheese

Prepare the Vegetables

  • Chop the onion, carrots and celery into small pieces. Mince the garlic finely. Keep everything ready before cooking. This makes the process smooth and easy. Preparing ingredients first helps you stay relaxed while cooking.

Cook the Sausage

  • Heat olive oil in a large soup pot over medium heat. Add the Italian sausage. Cook until browned and fully done. Break it into small pieces while cooking. Remove excess fat if needed, but keep some for flavor.

Sauté the Aromatics

  • Add chopped onion, carrots and celery to the pot. Stir well with the sausage. Cook for five minutes until vegetables soften. Add minced garlic and cook for one more minute. The aroma will become rich and inviting.
