Ingredients
  

  • 2 cups puffed quinoa
  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions
  

Prepare the Pan

  • Line a square baking dish with parchment paper. Let the paper hang over the sides. This makes it easier to lift the bars later.

Add Puffed Quinoa to Bowl

  • Place puffed quinoa into a large mixing bowl. Break up any clumps using your hands. Set the bowl aside while preparing the mixture.

Warm Peanut Butter and Honey

  • Add peanut butter and honey to a small saucepan. Heat on low. Stir gently until smooth and combined. Do not let it boil.

Add Vanilla Extract

  • Remove the saucepan from heat. Add vanilla extract. Stir well. The mixture should look glossy and smell warm and nutty.

Combine with Quinoa

  • Pour the warm peanut butter mixture over the puffed quinoa. Stir gently until everything is coated evenly. Take your time with this step.

Press into Pan

  • Transfer the mixture into the prepared pan. Press it down firmly using a spatula. Make sure the layer is even and compact.

Melt the Chocolate

  • Add chocolate chips and coconut oil to a clean saucepan. Heat on low. Stir until melted and smooth. Keep the heat gentle.

Add Chocolate Layer

  • Pour the melted chocolate over the quinoa layer. Spread it evenly with a spoon. Cover all corners for a smooth finish.

Chill the Bars

  • Place the pan in the refrigerator. Chill for at least one hour. This helps the bars set properly.

Slice and Serve

  • Remove from the fridge. Lift the bars using parchment paper. Slice into even squares. Serve and enjoy.

  • Use crunchy peanut butter for extra texture.
  • Add chopped nuts for more crunch.
  • Use milk chocolate for sweeter bars.
