Ingredients

  • 2 pounds pork jowl skin on
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 cloves garlic minced
  • 1 teaspoon brown sugar optional for glaze
  • Fresh herbs for garnish like thyme or parsley

Instructions

Prepare the Pork Jowl

  • Trim any excess skin or fat if needed. Pat the pork jowl dry with paper towels. This helps it crisp better.

Season the Pork

  • Rub olive oil over the pork. Sprinkle salt, pepper, paprika, and garlic evenly. Massage the seasonings into the meat.

Optional Sweet Glaze

  • If you like a sweet touch, mix brown sugar with a little water. Brush lightly over the pork jowl for caramelized flavor.

Preheat the Oven

  • Preheat your oven to 325°F (165°C). A low and slow roast brings tender, juicy results.

Sear the Pork

  • Heat a skillet over medium-high heat. Place the pork jowl skin-side down. Sear for 3–5 minutes until golden brown. Flip and sear the other side briefly.

Roast the Pork

  • Transfer the pork jowl to a roasting dish. Place in the oven and cook for 45–60 minutes. Baste occasionally with juices or glaze.

Check for Doneness

  • Use a meat thermometer. The internal temperature should reach 145°F (63°C). The meat should be tender, not dry.

Rest the Meat

  • Remove from oven and let the pork rest 10 minutes. This keeps the juices inside and makes it tender.

Slice and Serve

  • Slice thinly or into cubes. Serve with roasted vegetables, mashed potatoes, or a fresh salad.

Garnish and Enjoy

  • Sprinkle fresh herbs on top. This adds color and flavor. Serve warm for the best taste.

Notes

  • For extra crispiness, broil the pork jowl for 2–3 minutes at the end.
  • Try marinating in soy sauce, honey, and garlic for an Asian twist.
  • Serve over rice or in a sandwich for a different meal.
  • Slow-cook in a crockpot for 6–8 hours for tender meat.
  • Use smoked paprika or chipotle for a smoky flavor.
