Ingredients
  

  • Pork shoulder or pork butt – 8 pounds
  • Olive oil – 2 tablespoons
  • Brown sugar – 3 tablespoons
  • Paprika – 2 tablespoons
  • Garlic powder – 1 tablespoon
  • Onion powder – 1 tablespoon
  • Black pepper – 1 tablespoon
  • Salt – 2 tablespoons
  • Chili powder – 1 teaspoon
  • Apple juice – 1 cup
  • BBQ sauce – optional for serving

Instructions
  

Prepare the Pork

  • Pat the pork dry using paper towels. This helps the seasoning stick better.

Oil the Meat

  • Rub olive oil all over the pork. Cover every side evenly.

Mix the Rub

  • Mix brown sugar, paprika, garlic powder, onion powder, salt, pepper and chili powder in a bowl.

Season Generously

  • Rub the seasoning mix over the pork. Press it gently into the meat.

Rest the Pork

  • Let the pork rest at room temperature for thirty minutes before cooking.

Preheat the Pit Boss

  • Set the Pit Boss to 225 degrees Fahrenheit. Allow it to fully heat.

Place Pork on Grill

  • Put the pork directly on the grill grates. Fat side up works best.

Spray for Moisture

  • Spray pork with apple juice every hour. This keeps it moist.

Cook Low and Slow

  • Cook until internal temperature reaches 165 degrees Fahrenheit.

Wrap the Pork

  • Wrap the pork tightly in foil. Add a little apple juice inside.

Continue Cooking

  • Place wrapped pork back on grill. Cook until temperature reaches 203 degrees Fahrenheit.

Rest the Meat

  • Remove pork from grill. Let it rest wrapped for one hour.

Shred the Pork

  • Unwrap pork carefully. Shred using forks or meat claws.

Mix and Serve

  • Mix shredded pork with juices. Add BBQ sauce if desired.

Notes

  • Use hickory or apple pellets for best flavor
  • Keep the lid closed during cooking
  • Resting the meat is very important
  • Try honey instead of sugar for sweetness
  • Add cayenne for extra heat
