Ingredients
  

For the cake:

  • 200 g all-purpose flour
  • 150 g sugar
  • 100 g butter softened
  • 3 eggs
  • 1 teaspoon baking powder
  • ½ cup milk
  • ½ cup ground pistachios
  • 1 teaspoon vanilla extract

For the truffle filling:

  • 200 g dark chocolate
  • 150 ml heavy cream

For topping:

  • 50 g chopped pistachios
  • Chocolate ganache optional

Instructions
  

Prepare the Oven and Tins

  • Preheat your oven to 180°C. Line cake tins with baking paper and grease lightly. This helps the cake release easily after baking.

Cream Butter and Sugar

  • In a bowl, beat butter and sugar until light and fluffy. This step helps create a soft cake texture. Mix well until smooth and creamy.

Add Eggs Gradually

  • Add eggs one at a time. Beat well after each addition. This keeps the batter smooth and prevents curdling.

Add Dry Ingredients

  • Sift flour and baking powder into the mixture. Add ground pistachios. Fold gently using a spatula to keep the batter light and airy.

Add Milk and Vanilla

  • Pour in milk and vanilla extract. Mix gently until smooth. The batter should be soft and slightly thick.

Bake the Cake

  • Pour batter into prepared tins. Bake for 25–30 minutes until golden and cooked through. Let the cakes cool completely before slicing.

Prepare the Truffle Filling

  • Heat cream in a saucepan until warm. Pour over chopped chocolate. Stir until smooth and glossy. Let it cool slightly to thicken.

Assemble the Cake

  • Slice the cake into layers. Spread truffle filling between layers. Cover the top with ganache if using. Sprinkle chopped pistachios for decoration.
