Ingredients
  

  • Ground beef: 1½ pounds
  • Olive oil: 1 tablespoon
  • Onion chopped: 1 large
  • Bell peppers chopped: 2
  • Jalapeño minced: 1
  • Garlic cloves minced: 4
  • Tomato paste: 2 tablespoons
  • Crushed tomatoes: 1 can 28 oz
  • Kidney beans drained: 1 can (15 oz)
  • Black beans drained: 1 can (15 oz)
  • Beef broth: 1½ cups
  • Chili powder: 2 tablespoons
  • Ground cumin: 1 teaspoon
  • Smoked paprika: 1 teaspoon
  • Salt: 1 teaspoon
  • Black pepper: 1 teaspoon

Instructions
  

Heat the Pot

  • Place pot on medium heat. Add olive oil. Let it warm gently before adding ingredients.

Brown the Beef

  • Add ground beef to pot. Cook until brown. Break meat into small pieces while stirring.

Remove Extra Fat

  • Drain extra grease carefully. This keeps chili rich but not heavy.

Add Onions and Peppers

  • Add chopped onion and bell peppers. Cook five minutes until soft and fragrant.

Add Jalapeño and Garlic

  • Stir in jalapeño and garlic. Cook one minute until smell becomes strong and warm.

Stir Tomato Paste

  • Add tomato paste to pot. Stir well and cook two minutes for deeper flavor.

Add Tomatoes

  • Pour crushed tomatoes into pot. Stir slowly until everything blends smoothly.

Add Beans

  • Add kidney beans and black beans. Stir gently so beans stay whole.

Pour in Broth

  • Add beef broth. Stir and bring mixture to gentle simmer.

Add Spices

  • Sprinkle chili powder, cumin, paprika, salt and pepper. Stir until evenly mixed.

Simmer Slowly

  • Lower heat and cover pot. Simmer for forty minutes. Stir occasionally to prevent sticking.

Taste and Adjust

  • Taste chili carefully. Add more salt or spice if needed.

Rest Before Serving

  • Turn off heat. Let chili rest ten minutes to thicken and settle flavors.

Serve Hot

  • Ladle chili into bowls. Add toppings if desired. Enjoy warm and comforting bites.
