Ingredients
  

For the Peach Filling

  • 6 cups fresh peaches peeled and sliced
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons cornstarch

For the Cobbler Topping

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 1 cup whole milk
  • ½ cup unsalted butter melted

Instructions
  

Prepare the Peaches

  • Wash, peel, and slice the fresh peaches into even pieces. Mix them with granulated sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg and cornstarch until evenly coated.

Preheat the Oven

  • Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish. This prevents sticking and makes serving the cobbler much easier later.

Make the Batter

  • In a large bowl, whisk together the flour, baking powder, salt and sugar. Slowly stir in the milk and melted butter until the batter becomes smooth.

Pour the Batter

  • Pour the batter into the prepared baking dish. Do not stir after pouring. Keeping the batter even helps create a beautiful golden topping.

Add the Peach Mixture

  • Carefully spoon the seasoned peaches and their juices over the batter. Do not mix them together. During baking, the batter rises around the peaches naturally.

Bake Until Golden

  • Bake for about 45 minutes until the topping becomes golden brown. The peach filling should bubble gently around the edges, showing it is fully cooked.

Cool Slightly

  • Remove the cobbler from the oven and place it on a cooling rack. Let it rest for about fifteen minutes before serving to allow the filling to thicken.
