Ingredients

  • Zucchini squash – 2 medium
  • Olive oil – 3 tablespoons
  • Sea salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Garlic powder – ½ teaspoon
  • Parmesan cheese – ¼ cup finely grated
  • Fresh herbs – 1 tablespoon chopped
  • Lemon zest – ½ teaspoon

Instructions

Wash the Zucchini

  • Rinse zucchini under cold water. Dry completely using a clean towel before slicing.

Slice the Zucchini

  • Slice zucchini into very thin rounds. Use mandoline for even thickness if possible.

Preheat the Oven

  • Preheat oven to 400°F. Line baking sheets with parchment paper.

Season the Zucchini

  • Place slices in bowl. Add olive oil, salt, pepper and garlic powder.

Toss Gently

  • Toss slices carefully until all pieces are lightly coated with oil and seasoning.

Arrange on Tray

  • Lay slices in single layer. Do not overlap or they will steam.

Add Parmesan

  • Sprinkle parmesan lightly over zucchini slices for extra flavor and crispness.

Bake the Chips

  • Bake for 20 to 25 minutes. Flip halfway for even browning.

Watch Closely

  • Check often near end. Thin slices can brown quickly.

Remove and Cool

  • Remove from oven when golden. Transfer to cooling rack to crisp further.

Finish with Herbs

  • Sprinkle fresh herbs and lemon zest while chips are still warm.

Serve Fresh

  • Serve immediately for best crunch and flavor.

Notes

  • Slice evenly for uniform crisping.
  • Use mandoline for best results.
  • Add chili flakes for heat.
  • Try pecorino instead of parmesan.
  • Air fry for quicker cooking.
  • Use yellow squash for color.
  • Serve with aioli or yogurt dip.
