Ingredients
  

  • Beef short ribs – 600g
  • Lumache pasta – 300g
  • Onion – 1 large chopped
  • Carrot – 1 chopped
  • Celery – 1 stalk chopped
  • Garlic – 3 cloves minced
  • Tomato paste – 2 tablespoons
  • Crushed tomatoes – 1 cup
  • Beef broth – 2 cups
  • Olive oil – 2 tablespoons
  • Red wine optional – ½ cup
  • Salt – to taste
  • Black pepper – ½ teaspoon
  • Fresh basil – for garnish
  • Parmesan cheese – for serving

Prepare the Short Ribs

  • Pat the short ribs dry using paper towels. Season them with salt and pepper. This helps build a strong flavor during cooking.

Sear the Meat

  • Heat olive oil in a Dutch oven over medium-high heat. Add the short ribs. Sear them until browned on all sides. This locks in flavor.

Cook the Vegetables

  • Remove the ribs and set aside. In the same pot, add onion, carrot and celery. Cook until soft. Add garlic and cook for another minute.

Add Tomato Paste

  • Stir in tomato paste. Cook for a few minutes. This deepens the flavor and adds richness to the sauce.

Deglaze the Pot

Add Liquids and Meat
