Ingredients
  

  • 200 g dark chocolate 70% cocoa
  • 300 ml double cream
  • 3 large eggs
  • 50 g sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Whipped cream or berries for serving optional

Instructions
  

Chop the Chocolate

  • Break chocolate into small pieces. Place in a heatproof bowl ready for melting.

Heat the Cream

  • Pour cream into a saucepan. Warm gently until just below boiling, not boiling.

Pour Cream Over Chocolate

  • Pour hot cream over chocolate. Let sit for 1–2 minutes to melt chocolate.

Whisk Until Smooth

  • Whisk chocolate and cream together until completely smooth and glossy.

Add Eggs and Sugar

  • Beat eggs with sugar. Stir into chocolate mixture carefully until fully combined.

Add Vanilla and Salt

  • Mix in vanilla extract and a pinch of salt for depth of flavor.

Pour Into Ramekins

  • Divide mixture evenly into 4 small pots or ramekins.

Chill to Set

  • Place in fridge for at least 2 hours until chocolate pots are firm and creamy.

Serve With Toppings

  • Top with whipped cream, fresh berries or shaved chocolate if desired.
