Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beer any light or amber style
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese freshly grated
  • ½ cup mozzarella cheese grated
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions
  

Melt the butter

  • Place butter in a saucepan over medium heat and let it melt slowly while you stir gently to stop burning.

Add the flour

  • Sprinkle flour over melted butter, whisk constantly for one minute to cook the flour and make a smooth paste base.

Pour in the beer

  • Slowly pour in the beer while whisking well so lumps disappear and the mixture becomes silky, foamy and thickening gently.

Add the milk

  • Pour milk into the pan, keep whisking without stopping and let the sauce simmer until it becomes smooth, creamy and slightly thick.

Stir in cheddar cheese

  • Add grated cheddar cheese by handfuls, stirring constantly so it melts evenly and blends fully into the warm sauce mixture.

Add mozzarella cheese

  • Sprinkle mozzarella into the pan, stir until stretchy and smooth cheese forms, giving the dip lovely pull and soft texture.

Season the sauce

  • Add Dijon mustard, garlic powder, paprika, salt and pepper, stirring slowly so every flavor spreads gently through the cheese.

Adjust thickness

  • Let the sauce cook a little longer or add milk slowly if needed so the beer cheese reaches your favorite dipping thickness.

Serve warm

  • Pour the beer cheese into a serving bowl, keep it warm and serve right away with pretzels, bread or fries happily.
