Ingredients

  • 2 cups fresh breadcrumbs
  • 1 large onion finely chopped
  • 2 tablespoons butter
  • 1 tablespoon fresh sage chopped (or 1 teaspoon dried sage)
  • 1 egg beaten
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup vegetable stock

Instructions

Cook the Onions

  • Place a frying pan over medium heat. Add butter and chopped onions. Cook gently for 5–7 minutes until soft and slightly golden. Stir often so they do not burn.

Prepare the Breadcrumbs

  • Put fresh breadcrumbs into a large mixing bowl. If you don’t have fresh breadcrumbs, you can make them using slightly stale bread.

Add the Flavor

  • Add cooked onions into the breadcrumbs. Then add chopped sage, salt, and black pepper. Mix everything well so the flavor spreads evenly.

Add the Egg

  • Pour the beaten egg into the mixture. Stir gently until everything starts to come together. The mixture should feel slightly moist and soft.

Add the Stock

  • Slowly pour vegetable stock into the bowl. Mix again until the stuffing is moist but not too wet. It should hold its shape when pressed.

Shape the Stuffing

  • You can shape the stuffing into small balls or press it into a baking dish. Both methods work well depending on your preference.

Preheat the Oven

  • Set your oven to 180°C (350°F). Allow it to heat while you prepare the stuffing for baking.

Bake the Stuffing

  • Place the stuffing in the oven. Bake for 25–30 minutes until the top is golden and slightly crispy.

Rest Before Serving

  • Remove the stuffing from the oven. Let it rest for a few minutes before serving. This helps it set and improves texture.

Serve and Enjoy

  • Serve warm with roast chicken, turkey or vegetables. Now you know how to make Mary Berry's Sage and Onion Stuffing at home.

Notes

  • Use fresh sage for better flavor.
  • Add sausage meat for a non-vegetarian version.
  • Mix in chopped apples for a sweet touch.
  • Use whole wheat breadcrumbs for extra fiber.
  • Add garlic for more depth of flavor.
  • Bake in muffin trays for individual portions.
