Ingredients

  • 400 g fresh strawberries hulled and chopped
  • 100 g caster sugar for strawberries
  • 300 ml double cream
  • 200 ml whole milk
  • 100 g caster sugar for cream mixture
  • 1 teaspoon vanilla extract
  • Optional: extra strawberries for garnish

Instructions

Prepare the Strawberries

  • Place chopped strawberries in a bowl. Sprinkle 100 g sugar over them. Let sit for 10 minutes. The sugar draws out juices and makes strawberries sweet and soft.

Puree the Strawberries

  • Use a blender or food processor to puree the strawberries until smooth. You can leave small chunks if you like texture in your ice cream.

Whip the Cream

  • In a mixing bowl, pour double cream. Add 100 g sugar and vanilla extract. Whisk until soft peaks form. This creates a light, airy texture for the ice cream.

Mix Milk and Cream

  • In a separate bowl, combine milk and whipped cream gently. Stir slowly to keep air in the mixture. This helps the ice cream stay smooth and creamy.

Add Strawberry Puree

  • Fold strawberry puree into the cream and milk mixture. Mix gently to create a pink, creamy base. Taste and adjust sugar if needed.

Chill the Mixture

  • Cover the mixture and refrigerate for 15-20 minutes. Chilling helps the ice cream freeze faster and prevents ice crystals from forming.

Churn in Ice Cream Maker

  • Pour chilled mixture into ice cream maker. Churn according to manufacturer’s instructions, usually 20-25 minutes. Ice cream will become soft and creamy.

Freeze to Set

  • Transfer ice cream into a freezer-safe container. Cover and freeze for at least 4 hours. This allows the ice cream to firm up for perfect scoops.

Serve and Enjoy

  • Scoop ice cream into bowls or cones. Garnish with fresh strawberries if desired. Enjoy homemade, creamy, fruity ice cream with your family.

Notes

  • Use frozen strawberries in winter if fresh are unavailable.
  • Add a squeeze of lemon juice for brighter flavor.
  • Swirl in chocolate sauce or crushed biscuits for variation.
  • Replace some strawberries with raspberries for a mixed berry ice cream.
  • For extra creaminess, use half cream and half mascarpone cheese.
  • Serve with shortcake or meringues for a classic dessert twist.
