Ingredients
  

  • 6 sausages pork or chicken
  • 2 cups canned white beans drained
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 carrot chopped
  • 1 cup canned tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken stock
  • 1/4 cup breadcrumbs

Instructions
  

Brown the Sausages

  • Heat a frying pan with a little oil. Add sausages and cook until browned on all sides. This step adds flavor and color. Remove them and set aside.

Cook the Vegetables

  • In the same pan, add onion, garlic and carrot. Cook for a few minutes until soft. Stir often to prevent burning. The vegetables should smell sweet and rich.

Add Tomato Base

  • Add canned tomatoes and tomato paste to the pan. Stir well to combine. The mixture will become thick and rich in color.

Add Beans and Stock

  • Add white beans and chicken stock to the mixture. Stir gently so the beans do not break. This creates the base of the cassoulet.

Season the Dish

  • Add thyme, paprika, salt, and pepper. Mix everything well. These spices bring warmth and depth to the dish.

Combine with Sausages

  • Place the browned sausages into the mixture. Make sure they are covered with sauce. This helps them absorb flavor while cooking.

Transfer to Oven Dish

  • Pour everything into a casserole dish. Spread evenly. Sprinkle breadcrumbs on top for a crispy finish.

Bake the Cassoulet

  • Preheat the oven to 180°C (350°F). Bake for 40–45 minutes until bubbling and golden on top. The sauce should be thick and rich.
