Ingredients

  • 200 g digestive biscuits or graham crackers
  • 100 g melted butter
  • 400 g sweetened condensed milk
  • 4 egg yolks
  • 120 ml fresh key lime juice
  • 1 tablespoon lime zest
  • 200 ml heavy cream
  • 2 tablespoons powdered sugar

Instructions

Crush the Biscuits

  • Place the biscuits into a food processor. Blend until they turn into fine crumbs. If you do not have a processor, use a rolling pin. Crush them in a sealed bag until smooth and even.

Mix with Butter

  • Pour the melted butter into the crumbs. Mix well until the texture feels like wet sand. Make sure every crumb is coated. This helps the crust hold together properly.

Form the Crust

  • Press the mixture into a pie dish. Use the back of a spoon to flatten it evenly. Push it slightly up the sides as well. This creates a firm base for your filling.

Bake the Crust

  • Place the crust in a preheated oven at 180°C. Bake for about 10 minutes. This step makes the crust crisp and golden. Let it cool completely before adding filling.

Prepare the Filling

  • In a bowl, whisk egg yolks until smooth. Add condensed milk slowly while mixing. Then pour in fresh lime juice and zest. Mix until thick and creamy.

Fill the Pie

  • Pour the lime filling into the cooled crust. Spread it evenly using a spatula. Make sure the top looks smooth and level.

Bake the Pie

  • Bake again for 10 to 15 minutes. The filling should set but still jiggle slightly. Do not overbake. Let it cool at room temperature first.

Chill the Pie

  • Place the pie in the fridge for at least 3 hours. This helps the filling firm up. It also improves the flavor and texture.

Whip the Cream

  • Whisk the heavy cream with powdered sugar until soft peaks form. Do not overwhip. It should look light and fluffy.

Decorate and Serve

  • Spread or pipe whipped cream on top of the pie. Add extra lime zest for color. Slice and serve chilled for the best taste.

Notes

  • Use fresh key lime juice for best flavor. Bottled juice tastes different.
  • Chill the pie overnight for a firmer texture.
  • Add a pinch of salt to the crust for better balance.
  • Try a biscuit base with chocolate for a twist.
  • Use mascarpone instead of cream for a richer topping.
