Ingredients
  

  • 200 g unsalted butter softened
  • 200 g caster sugar
  • 3 large eggs
  • 200 g self-raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • 150 g strawberry or raspberry jam
  • 75 g desiccated coconut
  • 2 tablespoons icing sugar optional topping

Instructions
  

Prepare the Baking Tray

  • Line your baking tray with parchment paper. This helps the cake come out easily later. Preheat your oven to 180°C. Make sure the oven is hot before baking starts. This step is very important for even cooking.

Cream Butter and Sugar

  • Put the softened butter and sugar in a bowl. Mix until light and fluffy. This takes about three to four minutes. The mixture should look pale and smooth. This step gives the cake a soft texture.

Add Eggs Slowly

  • Add eggs one at a time into the mixture. Mix well after each egg. This helps everything blend smoothly. If the mixture looks split, do not worry. It will come together later.

Add Dry Ingredients

  • Add flour and baking powder to the bowl. Fold gently using a spatula. Do not overmix the batter. Add milk to make it smooth. The batter should be soft and easy to spread.

Spread the Batter
