Mary Berry Flapjacks Recipe

The Mary Berry flapjacks recipe is one of my favorite easy bakes. It is simple, warm and comforting. These golden oat bars are chewy and rich.

Ingredients
  

  • 200 g rolled oats
  • 100 g butter
  • 75 g brown sugar
  • 2 tablespoons golden syrup
  • 1 teaspoon vanilla extract optional
  • Pinch of salt

Prepare the Baking Tray

  • Line your baking tray with parchment paper. Make sure the paper covers all sides. This helps remove the flapjacks easily later. Preheat your oven to 180°C (350°F). A ready oven ensures even baking and perfect texture.

Melt Butter and Sugar

  • Take a saucepan and add butter, brown sugar and golden syrup. Heat on low flame. Stir slowly until everything melts into a smooth mixture. Do not boil it. Just let it combine gently.

Add Vanilla and Salt

  • Once melted, remove from heat. Add vanilla extract and a pinch of salt. Stir well to mix flavors evenly. This step gives a lovely aroma and balances sweetness perfectly.

Mix in the Oats

  • Add rolled oats into the warm mixture. Stir slowly until all oats are fully coated. Make sure no dry oats remain. The mixture should look thick and sticky.

Transfer to Tray

  • Pour the oat mixture into your lined tray. Spread it evenly using a spatula. Press it down gently so it holds shape after baking. Smooth the top for even cooking.

Bake the Flapjacks

  • Place the tray in the oven. Bake for about 20 minutes. The top should turn golden brown. Do not overbake or they will become hard instead of chewy.

Cool and Slice

  • Remove from oven and let it cool in the tray. This step is very important. Once slightly warm, cut into squares. Let them cool completely before removing.

Notes

  • Use honey instead of golden syrup for a different flavor
  • Add raisins or chocolate chips for extra taste
  • Do not overbake if you want soft flapjacks
  • Press mixture firmly to avoid crumbling
  • Try adding chopped nuts for crunch
  • Use gluten-free oats if needed
