Ingredients
  

  • 4 chicken breasts
  • 150 g Taleggio cheese rind removed, sliced
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 200 ml double cream
  • 100 ml chicken stock
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley chopped

Instructions
  

Prepare the Chicken

  • Season the chicken breasts with salt and black pepper. Heat olive oil in a pan. Cook the chicken on both sides until golden brown. Do not cook fully yet. Remove and set aside.

Cook the Onion and Garlic

  • In the same pan, add chopped onion. Cook until soft and slightly golden. Add minced garlic and cook for one minute. Stir gently so it does not burn.

Make the Creamy Sauce

  • Pour in the chicken stock and double cream. Stir well to combine. Let it simmer for a few minutes. The sauce should start to thicken slightly.

Add Taleggio Cheese

  • Add sliced Taleggio cheese into the sauce. Stir slowly until it melts completely. The sauce will become creamy and smooth. Keep the heat low to avoid burning.

Return Chicken to the Pan

  • Place the chicken back into the pan. Spoon some sauce over each piece. Add dried thyme for extra flavor. Let it simmer gently for five minutes.

Transfer to Baking Dish

  • Move the chicken and sauce into a baking dish. Spread evenly so each piece is covered with sauce. This helps the chicken stay moist while baking.

Bake the Dish

  • Place the dish in a preheated oven at 180°C. Bake for 15 minutes. The chicken should be fully cooked and tender. The sauce will bubble slightly on top.

Garnish and Serve

  • Take the dish out of the oven. Sprinkle fresh parsley on top. Serve hot with your favorite side dishes. Enjoy the rich and creamy flavors.

  • Use boneless chicken thighs for extra juicy texture
