Ingredients

  • 225 g self-raising flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 50 g unsalted butter cubed
  • 150 g mature cheddar cheese grated
  • 150 ml milk plus extra for brushing
  • 1 large egg optional, for glaze

Instructions

Preheat the Oven and Prepare Baking Sheets

  • Preheat the oven to 220°C (200°C fan) / 425°F. Line two baking sheets with parchment paper. This ensures the scones bake evenly and do not stick.

Mix Dry Ingredients

  • In a large mixing bowl, combine self-raising flour, baking powder, and salt. Stir well to distribute ingredients evenly. This creates a light base for the scones.

Rub in the Butter

  • Add cubed butter to the flour mixture. Rub it in using your fingertips until it resembles fine breadcrumbs. This step gives the scones a light, flaky texture.

Add the Cheese

  • Stir in the grated cheddar cheese. Mix gently to ensure the cheese is evenly spread. The cheese adds flavor and richness to the scones.

Make the Dough

  • Gradually add milk to the dry mixture. Mix with a wooden spoon until it forms a soft dough. Do not overwork the dough, or the scones may become tough.

Shape the Scones

  • Turn the dough onto a floured surface. Roll it out to about 2cm thick. Use a round cutter or knife to shape the scones. Place them on the prepared baking sheets, leaving space to rise.

Brush and Prepare for Baking

  • Brush the tops lightly with milk or beaten egg for a golden finish. This step gives scones a beautiful shiny top and helps them brown evenly.

Bake the Scones

  • Bake in the preheated oven for 12–15 minutes. They should rise and turn golden brown. Remove from the oven and transfer to a cooling rack. Serve warm for the best flavor.

Notes

  • Use mature cheddar for stronger flavor.
  • Add herbs like chives or thyme for a savory twist.
  • For mini scones, reduce baking time by 2–3 minutes.
  • Avoid overworking dough to keep scones light and fluffy.
  • Serve with butter, jam, or cream cheese.
  • Freeze uncooked scones for up to 2 months and bake from frozen.
