Prepare the Dry Ingredients

  • Take a medium bowl and add the flour, baking powder, salt and sugar. Use a whisk to mix everything well. This helps spread the baking powder evenly. Proper mixing gives the blinis a soft and fluffy texture when cooking.

Mix the Wet Ingredients

  • In another bowl, crack the egg and whisk it lightly. Add the milk and melted butter. Continue whisking until the mixture looks smooth and creamy. The butter adds flavor while the milk keeps the batter light.

Combine the Batter

  • Slowly pour the wet mixture into the bowl of dry ingredients. Whisk gently while mixing. Continue until the batter becomes smooth and lump-free. The batter should be slightly thick but still pour easily from a spoon.

Rest the Batter

  • Let the batter sit for about five minutes. This short resting time allows the flour to absorb the liquid. The baking powder also starts working. This step helps create soft blinis with a tender texture.

Heat the Pan

  • Place a non-stick frying pan on medium heat. Add a small amount of butter or oil. Let it melt and spread across the surface. A well-heated pan helps the blinis cook evenly and develop a light golden color.

Cook the Blinis
