Ingredients
  

  • 500 g beef chuck cut into cubes
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 garlic cloves minced
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 100 g mushrooms optional
  • Fresh parsley for garnish

Instructions
  

Prepare the Beef

  • Pat the beef dry with paper towels. This helps it brown better. Season with salt and pepper. Toss the beef in flour. This gives a nice crust and thickens the sauce later.

Brown the Beef

  • Heat oil in a pan over medium heat. Add the beef in small batches. Cook until browned on all sides. Do not overcrowd the pan. Remove and set aside.

Cook the Vegetables

  • In the same pan, add chopped onion and carrots. Cook until soft and slightly golden. Add garlic and cook for one minute. Stir gently to avoid burning.

Build the Base Flavor

  • Add tomato paste and stir well. Cook for one minute to remove raw taste. This step adds depth and color to the casserole.

Add Liquid Ingredients

  • Pour in the beef stock slowly. Stir to mix everything. Scrape the bottom of the pan to release flavor. This makes the sauce richer.

Combine Everything

  • Return the beef to the pot. Add thyme and bay leaf. Mix well so the beef is coated in sauce. Add mushrooms if using.

Slow Cook in the Oven

  • Transfer everything to an oven-safe dish. Cover with a lid. Bake at 160°C for about 2 hours. The beef will become tender and juicy.

Check and Adjust

  • Remove from oven and check the sauce. If too thin, simmer on stove for a few minutes. Taste and adjust seasoning with salt and pepper.

Garnish and Serve

  • Sprinkle fresh parsley on top before serving. Serve hot with bread, rice or mashed potatoes. Enjoy the rich and comforting flavors.
