Ingredients

For the Cake:

  • 200 g self-raising flour
  • 200 g caster sugar
  • 200 g unsalted butter softened
  • 4 large eggs
  • 2 tablespoons cocoa powder
  • 60 ml Baileys Irish Cream
  • 1 teaspoon baking powder
  • 2 tablespoons milk

For the Frosting:

  • 150 g unsalted butter softened
  • 250 g icing sugar
  • 3 tablespoons Baileys Irish Cream
  • 1 tablespoon cocoa powder

Instructions

Prepare the Tins

  • Preheat your oven to 180°C (350°F). Grease two round cake tins. Line the bottom with baking paper. This prevents sticking. Proper preparation makes removal easy later.

Cream Butter and Sugar

  • Place butter and caster sugar in a bowl. Beat together until light and fluffy. This step adds air into the mixture. It helps create a soft cake texture.

Add Eggs Slowly

  • Add eggs one at a time. Beat well after each addition. This prevents the mixture from curdling. Take your time here for smooth batter.

Mix Dry Ingredients

  • In another bowl, combine flour, cocoa powder and baking powder. Stir gently. This ensures even chocolate flavor. Dry mixing helps avoid lumps later.

Combine Wet and Dry

  • Add dry mixture into the butter mixture slowly. Pour in Baileys and milk. Fold gently using a spatula. Do not overmix. The batter should be smooth and thick.

Bake the Cake

  • Divide batter evenly between tins. Smooth the tops. Bake for 25 to 30 minutes. Insert a toothpick in center. If it comes out clean, cake is ready.

Cool Completely

  • Remove cakes from oven. Let them cool in tins for 10 minutes. Then transfer to a rack. Cooling prevents melting frosting later.

Prepare the Frosting

  • Beat butter until creamy. Add icing sugar gradually. Mix in cocoa powder and Baileys. Beat until smooth and fluffy. Taste and adjust if needed.

Assemble the Cake

  • Place one cake layer on a plate. Spread frosting evenly on top. Place second layer gently. Cover the top with more frosting. Smooth using a spatula.

Notes

  • Use room temperature ingredients for better mixing.
  • Add chocolate chips for extra richness.
  • Replace Baileys with coffee for non-alcohol version.
  • Chill frosting slightly for cleaner spreading.
  • Dust cocoa powder on top for elegant finish.
