Ingredients
  

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter cold and cubed
  • 2/3 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: 1/2 cup raisins or dried cranberries
  • Extra cream or milk for brushing
  • Extra sugar for sprinkling

Instructions
  

Preheat Oven

  • Set oven to 400°F (200°C). Line a baking tray with parchment paper.

Mix Dry Ingredients

  • In a large bowl, whisk together flour, sugar, baking powder and salt.

Cut in Butter

  • Add cold butter cubes. Use a pastry cutter or fork to mix until coarse crumbs form.

Add Wet Ingredients

  • In a small bowl, mix cream, egg and vanilla. Pour into flour mixture.

Form Dough

  • Stir gently until dough forms. Avoid overmixing to keep scones tender.

Add Optional Fruit

  • Fold in raisins or dried cranberries if using. Mix evenly but lightly.

Shape the Scones

  • Turn dough onto a floured surface. Pat into a circle, about 1 inch thick.

Cut Scones

  • Use a knife or round cutter to shape scones. Place on baking tray.

Brush with Cream

  • Brush tops with cream or milk. Sprinkle with sugar for a golden finish.

Bake Scones

  • Bake for 18–20 minutes until golden brown. Cool slightly on a rack.

Notes

  • Keep butter cold for flaky scones.
