Ingredients

  • 2 pounds ground beef 80% lean
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 2 cloves garlic minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 cup ketchup for topping
  • 1 tablespoon brown sugar for topping
  • 1 teaspoon mustard for topping

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan with butter or cooking spray.

Mix the Meat

  • In a large mixing bowl, combine ground beef, breadcrumbs, milk, chopped onion, minced garlic and egg.

Add Seasonings

  • Add salt, black pepper, thyme, oregano and paprika. Mix gently with a wooden spoon or your hands.

Shape the Loaf

  • Transfer the meat mixture into the greased loaf pan. Press lightly to shape evenly.

Prepare the Topping

  • Mix ketchup, brown sugar and mustard in a small bowl. Spread evenly on top of the meatloaf.

Bake the Meatloaf

  • Place in the oven and bake for 60 minutes. Check with a meat thermometer. It should read 160°F (71°C).

Rest the Meatloaf

  • Remove from oven and let it rest for 10 minutes. This helps keep it juicy and easy to slice.

Serve and Enjoy

  • Slice thick pieces. Serve with mashed potatoes, steamed vegetables or a fresh salad.

Notes

  • Mix half beef and half pork for richer flavor.
  • Add finely grated carrot or zucchini for extra moisture and nutrients.
  • Try Worcestershire sauce in the meat mixture for depth of flavor.
  • Use smoked paprika for a subtle smoky taste.
  • Make mini meatloaves in muffin tins for easy individual servings.
