Ingredients

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup breadcrumbs optional for topping

Instructions
  

Cook the Pasta

  • Boil water in a large pot. Add salt generously. Cook macaroni according to package instructions. Stir occasionally to prevent sticking. Drain and set aside.

Make the Roux

  • In a saucepan, melt butter over medium heat. Add flour slowly. Whisk constantly for about two minutes. The mixture should look smooth and slightly golden.

Add the Milk

  • Slowly pour milk into the roux while whisking. Keep stirring to avoid lumps. Cook for about five minutes. The sauce will thicken gently.

Add the Cheese

  • Lower the heat. Add shredded cheddar and mozzarella. Stir until fully melted. The sauce should be smooth and creamy. Add salt, pepper, and paprika.

Combine Pasta and Sauce

  • Add the cooked pasta into the cheese sauce. Stir gently until every piece is coated. Make sure sauce covers evenly for best flavor.

Transfer to Baking Dish

  • Preheat oven to 180°C. Pour pasta mixture into a greased baking dish. Spread evenly with a spoon. Sprinkle breadcrumbs on top if using.

Bake Until Golden

  • Place dish in the oven. Bake for about 20 minutes. The top should turn golden brown. The edges may bubble slightly.

Rest and Serve
