Ingredients

  • 1 package about 24 oz frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup cooked breakfast sausage or bacon pieces
  • 1 small onion finely chopped
  • 1 red bell pepper diced
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons butter for greasing pan

Instructions

Preheat Oven

  • Set oven to 350°F (175°C). Grease the baking dish with butter to prevent sticking.

Mix Hash Browns

  • In a large bowl, combine thawed hash browns, cheese, cooked meat, onion and bell pepper.

Whisk Eggs and Milk

  • In another bowl, whisk eggs with milk, salt, pepper and garlic powder until smooth.

Combine Everything

  • Pour egg mixture into hash brown mixture. Stir gently to mix evenly but do not overmix.

Transfer to Baking Dish

  • Spread mixture evenly in the prepared 9x13-inch dish. Smooth the top with a spatula.

Top with Extra Cheese

  • Sprinkle remaining cheddar or mozzarella on top for extra cheesy goodness.

Bake the Casserole

  • Bake in preheated oven for 45-50 minutes. The top should be golden and eggs set.

Cool Slightly

  • Let casserole rest for 5-10 minutes before slicing. This helps it hold shape.

Serve and Enjoy

  • Cut into squares and serve warm. Perfect with coffee or orange juice.

Notes

  • Use cooked ham instead of sausage or bacon for a different flavor.
  • Add spinach or mushrooms for extra veggies.
  • Use pepper jack cheese for a spicy kick.
  • Make ahead: assemble the night before and bake in the morning.
  • Sprinkle fresh herbs like parsley or chives before serving for freshness.
