Ingredients
  

  • 1 cup fresh lime juice about 4–6 limes
  • 1 cup granulated sugar
  • ½ cup water
  • 1 teaspoon lime zest optional for stronger flavor

Wash and Prepare the Limes

  • Wash the limes well under running water. Dry them with a towel. If using zest, grate the outer green skin carefully. Avoid the white part. Cut limes in half.

Juice the Limes

  • Use a citrus juicer to squeeze fresh lime juice. Remove seeds if needed. Measure one full cup. Fresh juice gives bright and natural flavor.

Heat Sugar and Water

  • Place sugar and water in a small saucepan. Heat over medium heat. Stir gently until sugar fully dissolves. Do not let it boil too hard.

Add Lime Juice and Zest

  • Once sugar dissolves, add fresh lime juice and zest. Stir gently. Simmer on low heat for 5 minutes. This blends flavors nicely.

Cool the Syrup

  • Turn off the heat. Let syrup cool completely in the pan. Cooling helps it thicken slightly. Do not rush this step.

Strain and Store

  • Strain syrup through a fine strainer into a clean jar. Remove zest pieces if desired. Seal tightly and refrigerate.
