Ingredients
  

  • Pork shoulder cubed – 2 pounds
  • Salt – 1 teaspoon
  • Black pepper – 1 teaspoon
  • Flour – 2 tablespoons
  • Vegetable oil – 2 tablespoons
  • Yellow onion chopped – 1 large
  • Garlic cloves minced – 4
  • Roasted green chilies chopped – 2 cups
  • Chicken broth – 4 cups
  • Cumin – 1 teaspoon
  • Oregano – 1 teaspoon
  • Paprika – 1 teaspoon
  • Green chili sauce – 1 cup
  • Cornstarch – 1 tablespoon
  • Water – 2 tablespoons

Instructions
  

Season the Pork

  • Sprinkle salt and pepper on pork cubes. Toss gently to coat every piece evenly.

Coat with Flour

  • Add flour to the pork. Mix until each cube has a light flour coating.

Heat the Pot

  • Heat oil in a large pot over medium heat. Let it warm gently before adding meat.

Brown the Pork

  • Add pork in batches. Brown all sides slowly. Do not rush this step.

Remove Pork

  • Remove browned pork from pot. Set aside on a plate.

Cook the Onion

  • Add chopped onion to the same pot. Stir until soft and lightly golden.

Add Garlic

  • Add minced garlic. Stir gently for one minute. Do not let it burn.

Add Green Chilies

  • Add chopped green chilies. Stir well. Let flavors blend for two minutes.

Return Pork

  • Return pork to the pot. Stir everything together gently.

Add Spices

  • Add cumin, oregano, and paprika. Stir until spices coat the meat.

Pour Broth

  • Pour chicken broth slowly. Scrape bottom of pot gently while stirring.

Add Chili Sauce

  • Add green chili sauce. Stir until mixture looks smooth and rich.

Simmer Slowly

  • Lower heat. Cover pot loosely. Simmer for 75 minutes. Stir sometimes.

Thicken the Chili

  • Mix cornstarch with water. Pour into pot. Stir gently until thickened.

Taste and Adjust

  • Taste chili. Add more salt or spice if needed. Serve warm.

Notes

  • Use pork shoulder for best texture and flavor.
  • Roast fresh chilies for deeper taste.
  • Simmer low and slow for tender meat.
  • Add jalapeños if you like extra heat.
  • Use beef instead of pork if preferred.
  • Serve thicker for burritos or thinner for bowls.
