Ingredients

  • 8 chicken pieces bone-in
  • 1 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • Vegetable oil for deep frying

Instructions

Prepare the Chicken

  • Rinse the chicken pieces under cold water. Pat them dry well using paper towels before seasoning.

Make the Marinade

  • Pour buttermilk into a bowl. Add salt and black pepper. Mix gently until combined.

Marinate the Chicken

  • Place chicken into the buttermilk. Cover and rest in the fridge for thirty minutes.

Mix the Flour Coating

  • Add flour to a bowl. Add all spices and herbs. Mix well until evenly blended.

Coat the Chicken

  • Remove chicken from marinade. Let excess drip off. Roll each piece in seasoned flour.

Rest the Coated Chicken

  • Place coated chicken on a wire rack. Let it rest for ten minutes.

Heat the Oil

  • Pour oil into a deep pan. Heat to 350°F using a thermometer.

Fry the Chicken

  • Carefully place chicken into hot oil. Fry in batches to avoid crowding.

Turn for Even Cooking

  • Turn chicken gently with tongs. Cook until golden brown on both sides.

Check for Doneness

  • Cook until internal temperature reaches 165°F. The coating should look crisp and golden.

Drain the Chicken

  • Remove chicken from oil. Place on paper towels to drain extra oil.

Rest Before Serving

  • Let chicken rest for five minutes. This keeps it juicy and crunchy.

Notes

  • Use room temperature chicken for even cooking.
  • Add a little cornstarch for extra crispy coating.
  • Use smoked paprika for deeper flavor.
  • Try air frying for a lighter version.
  • Adjust cayenne pepper for spice level.
