  • 1.5 kg baby potatoes washed and halved
  • 3 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions
  

Prepare the Potatoes

  • Wash the baby potatoes thoroughly. Cut larger ones in half to ensure even cooking. Place them in a large mixing bowl.

Mix the Seasonings

  • Add melted butter, olive oil, garlic, paprika, thyme, rosemary, salt and pepper to the potatoes. Mix gently until all pieces are coated.

Transfer to Crockpot

  • Place the seasoned potatoes into the crockpot. Spread them in a single layer for even cooking. Cover with the lid before cooking.

Cook on Low

  • Set the crockpot to low heat. Cook for 4–5 hours until potatoes are tender when pierced with a fork. The slow cooking makes them soft and flavorful.

Stir Occasionally

  • If possible, stir the potatoes halfway through cooking. This ensures all potatoes absorb the seasonings evenly and prevents sticking.

Check for Doneness

  • After 4 hours, check a few potatoes with a fork. They should be tender inside and flavorful outside. Adjust seasoning if needed.

Garnish and Serve

  • Transfer the cooked potatoes to a serving dish. Sprinkle chopped parsley on top for freshness. Serve hot with your favorite main dish.
