Ingredients

  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 cloves garlic crushed
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme

Prepare the Potatoes

  • Peel the potatoes first. Cut them into even chunks. Try to keep similar sizes. This helps them cook evenly. Wash them well to remove extra starch. Clean potatoes give better texture.

Boil the Potatoes

  • Place potatoes in a large pot. Add water and a pinch of salt. Bring to a boil. Cook for about 10 minutes. They should be soft outside but firm inside.

Drain and Rough Them Up

  • Drain the potatoes in a colander. Shake them gently. This step is very important. It creates rough edges. These edges turn crispy when roasted.

Preheat the Oven
