Ingredients
  

  • 500 g ground lamb
  • 1 small onion grated

  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cinnamon
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • Juice of ½ lemon

Prepare the Ingredients

  • Grate the onion and finely chop the herbs. Mince the garlic into very small pieces. Measure all the spices before mixing. Having everything ready makes cooking easier and keeps the process smooth from start to finish.

Mix the Kofta Mixture

  • Place the lamb into a large bowl. Add the onion, garlic, parsley, mint, spices, salt, pepper, olive oil and lemon juice. Mix gently with clean hands until everything combines well. Do not overmix because the meat can become firm.

Shape the Koftas

  • Divide the mixture into eight equal portions. Roll each piece into a long oval shape. If using skewers, press each kofta gently around a soaked skewer. Make sure every kofta has an even thickness for even cooking.

Heat the Pan

  • Place a grill pan or frying pan over medium-high heat. Lightly grease the surface with a little olive oil. Allow the pan to become hot before adding the koftas. This helps create a beautiful golden crust.

Cook the Koftas

  • Lay the koftas into the hot pan. Cook each side for about three to four minutes. Turn them carefully using tongs. Continue cooking until browned outside and fully cooked inside. The center should no longer look pink.

Rest Before Serving

  • Move the cooked koftas onto a serving plate. Let them rest for three minutes before serving. This simple step keeps the juices inside the meat. The result is tender, flavorful and delicious koftas every time.
