Ingredients
  

  • Filo pastry sheets – 6–8 sheets
  • Fresh spinach – 3 cups chopped
  • Feta cheese – 200g crumbled
  • Eggs – 3 large
  • Onion – 1 small chopped
  • Garlic – 2 cloves minced
  • Olive oil – 3 tablespoons
  • Milk or cream – ½ cup
  • Salt – ½ teaspoon
  • Black pepper – ½ teaspoon
  • Nutmeg – a pinch optional

Instructions
  

Preheat the Oven

  • Preheat your oven to 180°C. Lightly grease a baking dish with oil. This prevents sticking and helps the pie cook evenly.

Cook the Spinach Filling

  • Heat olive oil in a pan over medium heat. Add chopped onion and garlic. Cook until soft and fragrant. Add spinach and cook until wilted. Let it cool slightly before mixing.

Prepare the Egg Mixture

  • In a bowl, crack the eggs. Add milk or cream. Whisk until smooth. Add salt, pepper and nutmeg. This mixture makes the filling creamy.

Combine Filling Ingredients

  • Add the cooked spinach mixture into the egg mixture. Add crumbled feta cheese. Mix gently until everything is well combined.

Layer the Filo Pastry

  • Place one filo sheet in the baking dish. Brush lightly with oil. Add another sheet and repeat. Layer all sheets while brushing each layer for crispiness.

Add the Filling

  • Pour the spinach and feta mixture over the filo base. Spread evenly using a spoon. Make sure the filling reaches all corners.

Fold and Finish the Top

  • Fold any extra filo over the top. Brush lightly with oil. This creates a golden and crispy top layer when baked.

Bake the Pie

  • Place the dish in the oven. Bake for 30–35 minutes. The top should turn golden and crisp. The filling should be set but still soft.

Cool and Serve
