Ingredients
  

  • 4 chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 1 celery stick chopped
  • 200 g mushrooms sliced
  • 400 ml chicken stock
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley for garnish

Instructions
  

Prepare the Chicken

  • Pat the chicken dry using paper towels. This helps it brown better. Season with salt and pepper on both sides.

Heat the Pan

  • Add olive oil to a large pan. Heat it on medium flame. The oil should be warm before adding chicken.

Brown the Chicken

  • Place chicken pieces in the pan. Cook until golden on both sides. This step adds deep flavor. Remove and set aside.

Cook the Vegetables

  • In the same pan, add onion, garlic, carrots, celery and mushrooms. Cook for 5–7 minutes. Stir often until soft.

Add Tomato Paste

  • Stir in tomato paste. Cook for one minute. This helps build a rich and deep flavor in the casserole.

Add Stock and Herbs

  • Pour in chicken stock. Add thyme, salt and pepper. Stir well. Let it come to a gentle simmer.

Return the Chicken

  • Place the browned chicken back into the pan. Make sure it is covered with sauce. This helps it stay juicy.

Slow Cook the Casserole

  • Cover and cook in the oven at 180°C. Cook for 45–50 minutes. The chicken should become soft and tender.

Check the Sauce

  • After cooking, check the sauce. It should be thick and rich. If thin, cook a little longer uncovered.

Garnish and Serve

  • Sprinkle fresh parsley on top. Serve hot with rice, potatoes or bread. Enjoy the warm and rich flavors.
