Ingredients
  

  • 1 large broccoli head chopped
  • 1 tablespoon olive oil

  • 2 cloves garlic minced
  • 1 medium potato peeled and chopped
  • 3 cups vegetable or chicken stock
  • 100 grams Stilton cheese crumbled
  • 1/2 cup milk or cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
  

Prepare the Vegetables

  • Wash and chop the broccoli into small pieces. Peel and chop the potato. Chop the onion and mince the garlic. Keep everything ready. This step saves time while cooking.

Heat the Oil

  • Place a large pot on medium heat. Add olive oil and let it warm gently. Do not overheat the oil. Warm oil helps soften the vegetables evenly.

Cook the Onion

  • Add chopped onion to the pot. Cook for about 5 minutes. Stir often until it becomes soft and slightly golden. This builds a sweet base flavor.

Add Garlic

  • Add minced garlic to the onion. Cook for one minute only. Stir gently to avoid burning. Garlic adds a lovely aroma to the soup.

Add Potato

Add Broccoli

Pour the Stock

Simmer the Soup
