Ingredients
  

For the Meatloaf

  • 2 pounds ground beef 80/20
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

For the Garlic Sauce

  • 2 tablespoons butter
  • 4 garlic cloves minced
  • 2 tablespoons all-purpose flour
  • cups beef broth
  • ½ cup heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions
  

Prepare the Oven

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan to prevent sticking while baking.

Mix the Meatloaf

  • Place the ground beef, breadcrumbs, eggs, onion, garlic, ketchup, Worcestershire sauce, parsley, thyme, salt and pepper into a large bowl. Mix gently until everything is just combined.

Shape the Loaf

  • Transfer the meat mixture onto the prepared baking sheet. Shape it into an even loaf with your hands. Avoid pressing too firmly so the meatloaf stays tender.

Bake the Meatloaf

  • Bake the meatloaf for about one hour. Check that the center reaches 160°F (71°C) using a meat thermometer before removing it from the oven.

Start the Garlic Sauce

  • While the meatloaf bakes, melt the butter in a saucepan over medium heat. Add the minced garlic and cook gently until fragrant without letting it brown.

Finish the Sauce

  • Whisk the flour into the butter mixture. Slowly add the beef broth while whisking. Stir in the heavy cream and seasonings. Cook until the sauce becomes smooth and slightly thick.

Rest the Meatloaf

  • Remove the meatloaf from the oven and let it rest for ten minutes. Resting helps keep the juices inside each slice for better flavor and texture.

Slice and Serve

  • Slice the meatloaf into even portions. Spoon the warm garlic sauce over each serving. Garnish with fresh parsley and enjoy while everything is hot.
