  • 2 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp olive oil for cooking
  • Optional: 1 onion sliced; 8 oz mushrooms, sliced

Instructions
  

Cut the Steak

  • Trim fat from sirloin. Slice into 1.5-inch cubes. Uniform size cooks evenly. Pat dry with paper towels.

Make the Marinade

  • Whisk Worcestershire, soy sauce, ketchup, brown sugar, garlic powder, paprika, salt and pepper. Tastes just like IHOP.

Marinate the Meat

  • Toss steak cubes in marinade. Cover bowl. Let sit 30 mins at room temp. Or fridge overnight for bold flavor.

Heat the Pan

  • Warm cast iron skillet over high heat. Add olive oil. Wait till it shimmers and smokes lightly.
