Ingredients
  

  • 1 pound cooked boudin sausage
  • 2 cups Hot Cheetos crushed finely
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup green onions finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Vegetable oil for frying

Prepare the Boudin

  • Remove boudin from casings. Place filling into a large bowl. Break it apart gently.

Crush the Hot Cheetos

  • Add Hot Cheetos to a food processor. Pulse until fine crumbs form. Set aside.

Mix the Filling

  • Add cheese, green onions, garlic powder, and onion powder to the boudin. Mix until combined.

Shape the Balls

  • Scoop small portions of boudin mixture. Roll gently into even balls using clean hands.

Prepare the Breading

  • Place breadcrumbs in one bowl. Beat eggs in another bowl until smooth.
